1 ½ cups all-purpose flour
1 cup brown sugar (or coconut sugar)
1 tsp baking powder
1 tsp baking soda
½ tsp salt
1 tsp cinnamon
½ cup unsweetened applesauce
½ cup almond milk (or any plant-based milk)
1/3 cup vegetable oil (or melted coconut oil)
1 cup apple butter
1 cup diced apples (about 1 medium apple)
½ cup rolled oats
½ cup all-purpose flour
½ cup brown sugar
1 tsp cinnamon
¼ cup melted coconut oil
Instructions
Preheat your oven to 350°F (175°C).
In a large bowl, whisk together the flour, brown sugar, baking powder, baking soda, salt, and cinnamon.
In a separate bowl, mix the applesauce, almond milk, and vegetable oil until well combined.
Add the wet ingredients to the dry ingredients and stir gently until just mixed. Do not overmix!
Grease an 8-inch square or round baking pan. Pour half of the batter into the pan.
Spoon the apple butter and diced apples over the batter, spreading them evenly. Top with the remaining batter.
In a bowl, mix rolled oats, flour, brown sugar, cinnamon, and melted coconut oil until crumbly. Sprinkle over the top of the cake.
Bake for 35-40 minutes, or until a toothpick comes out clean (moist crumbs are okay due to the apple butter). Allow to cool slightly before slicing and serving!
Notes
For a gluten-free version, use gluten-free flour. Leftover cake can be stored in the fridge for up to 3 days.
