Ingredients

  • 1 cup all-purpose flour
  • 1 ½ cups plant-based milk (almond, oat, or soy)
  • 2 tablespoons coconut oil or vegan butter, melted
  • 1 tablespoon maple syrup or agave nectar
  • 1 teaspoon vanilla extract
  • A pinch of salt

Instructions

  1. In a mixing bowl, whisk together the flour and salt until well combined.
  2. Gradually pour in the plant-based milk, stirring continuously to avoid lumps.
  3. Add the melted coconut oil, maple syrup, and vanilla extract; mix until the batter is smooth.
  4. Let the batter rest for 15–20 minutes.
  5. Heat a non-stick skillet over medium heat and lightly grease it with a bit of oil.
  6. Pour about ¼ cup of batter into the skillet and swirl to cover the bottom in a thin layer.
  7. Cook for 1–2 minutes until the edges start to lift, then flip and cook the other side for another minute. Repeat with the remaining batter.

Notes

Use a non-stick skillet for best results and rest the batter for improved consistency. Store unused batter in the fridge for a couple of days.
