Ingredients

  • 2 cups all-purpose flour (or a gluten-free alternative)
  • 2 tablespoons sugar (coconut sugar works well)
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup plant-based milk (almond, soy, or oat)
  • 1/4 cup coconut oil (melted)
  • 1/2 cup brown sugar
  • 2 teaspoons ground cinnamon
  • 1/4 cup chopped pecans (plus more for topping)
  • 1/2 cup maple syrup
  • 1 tablespoon coconut oil (melted)
  • 1/4 cup chopped pecans (for garnish)

Instructions

  1. In a large bowl, whisk together flour, sugar, baking powder, and salt.
  2. In a separate bowl, mix plant-based milk and melted coconut oil.
  3. Combine the wet and dry ingredients until a dough forms.
  4. On a floured surface, roll out the dough into a rectangle about 1/4 inch thick.
  5. Spread brown sugar and cinnamon evenly over the dough. Sprinkle with chopped pecans.
  6. Starting from one side, carefully roll the dough tightly into a log. Slice into 1-inch pieces.
  7. In a small bowl, mix maple syrup and melted coconut oil.
  8. Pour half of the maple sauce into the bottom of the crockpot. Place the cinnamon rolls on top, then drizzle with the remaining sauce. Top with additional pecans.
  9. Cover the crockpot and cook on low for 3-4 hours, or until the rolls are fluffy and cooked through.

Notes

These buns can be prepared the night before and cooked in the morning. Refrigerate leftovers for up to 3 days.
