Ingredients

  • 1 cup flour (all-purpose or gluten-free)
  • ½ cup coconut oil (melted)
  • ½ cup brown sugar (lightly packed)
  • ¼ cup maple syrup
  • 1 tsp baking soda
  • ½ tsp salt
  • 1 cup shelled pistachios (coarsely chopped)
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine the melted coconut oil, brown sugar, maple syrup, and vanilla extract. Mix until well combined.
  3. In another bowl, whisk together the flour, baking soda, and salt.
  4. Gradually add the dry ingredients to the wet mixture, stirring until a dough forms.
  5. Gently fold in the chopped pistachios, ensuring they are evenly distributed throughout the dough.
  6. Scoop tablespoons of dough and place them on a parchment-lined baking sheet, spacing them about 2 inches apart.
  7. Bake for 10-12 minutes, or until lightly golden. Allow them to cool on the sheet for a few minutes before transferring to a wire rack.

Notes

Store in an airtight container at room temperature for up to a week. Can be frozen for up to 3 months.
