Ingredients

  • 4 cups fresh or frozen peas
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 2 medium carrots, diced
  • 1 medium potato, diced
  • 4 cups vegetable broth
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Instructions

  1. In a large stockpot, heat the olive oil over medium heat.
  2. Add the chopped onion and diced carrots; sauté for 5-7 minutes until translucent.
  3. Add the minced garlic and dried thyme; cook for an additional 1-2 minutes.
  4. Add the diced potatoes and peas, then pour in the vegetable broth and stir.
  5. Bring to a gentle boil, reduce to a simmer, and cover. Cook for about 20 minutes until potatoes are tender.
  6. Blend until smooth with an immersion blender or countertop blender.
  7. Ladle into bowls, drizzle with olive oil, and sprinkle with fresh herbs before serving.

Notes

For a creamier texture, blend the soup thoroughly. This soup is also great with crusty bread or grilled cheese.
