  • 12 oz rotini pasta
  • 1 lb boneless, skinless chicken breasts
  • 1 cup Velveeta cheese, cubed
  • 1 can cream of chicken soup
  • 1/2 cup chicken broth
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste
  • Optional: Fresh parsley for garnish

Instructions

  1. Cook the pasta by bringing a large pot of salted water to a boil. Add the rotini pasta and cook according to package instructions until al dente, approximately 8-10 minutes. Drain and set aside.
  2. In a large skillet over medium heat, add a drizzle of olive oil. When hot, add the boneless chicken breasts, sprinkling with salt, pepper, garlic, and onion powders. Sauté for 6-7 minutes on each side until cooked through and golden brown.
  3. Reduce the heat to low and add the cooked pasta to the skillet with the chicken. Pour in the cream of chicken soup and chicken broth, stirring to evenly distribute the sauce.
  4. Add the cubed Velveeta cheese to the skillet, stirring gently until the cheese melts and creates a creamy sauce.
  5. Let the mixture simmer on low heat for about 3-5 minutes, stirring occasionally, until well combined.
  6. Remove from heat, taste and adjust seasoning if needed. Serve in bowls or family-style from the skillet, garnished with chopped parsley if desired.

Notes

For a healthier version, add more vegetables or use reduced-fat cheese. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
