Ingredients

  • 4 cups fresh blackberries (or frozen, thawed)
  • 1 cup granulated sugar (adjust for sweetness)
  • 2 tablespoons lemon juice
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 cup almond milk (or milk of your choice)
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup butter, melted
  • Optional: 1 teaspoon cinnamon

Instructions

  1. In a bowl, combine the blackberries, 1/2 cup sugar, lemon juice, and vanilla extract. Stir gently to coat and set aside.
  2. In another bowl, whisk together flour, baking powder, salt, and the remaining sugar. Set aside.
  3. In a separate bowl, mix the almond milk and melted butter. Slowly pour this mixture into the dry ingredients, stirring until just combined (do not overmix).
  4. Spoon the blackberry mixture into the bottom of the slow cooker, then pour the batter evenly over the top.
  5. Cover and cook on low for 4-5 hours or on high for 2-3 hours, until the top is set and slightly golden.
  6. Once done, uncover and let cool for about 10 minutes before serving. Enjoy it warm!

Notes

Store any leftovers in the refrigerator for up to 3 days. Reheat in the microwave or oven at 350ยฐF for 10-15 minutes. This cobbler freezes wellโ€”wrap tightly in foil or plastic wrap and store for up to 3 months.
