Ingredients

  • 1 cup (226g) unsalted butter, softened
  • ½ cup (100g) powdered sugar
  • 1 teaspoon vanilla extract
  • 1 ½ cups (180g) all-purpose flour
  • ½ cup (60g) cornstarch

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, beat the softened butter and powdered sugar for 3-4 minutes until light and fluffy.
  3. Mix in the vanilla extract until smooth.
  4. Gradually add the all-purpose flour and cornstarch, mixing until just combined.
  5. Form small balls of dough (about 1 inch in diameter) and place on the baking sheet with space in between.
  6. Bake for 10-12 minutes until edges are barely golden. The centers should look slightly underbaked.
  7. Cool on the baking sheet for 5 minutes, then transfer to a wire rack.

Notes

For a fun twist, add chocolate chips or citrus zest. Store in an airtight container for up to a week.
