Ingredients

  • 4 medium yellow squash, sliced thin
  • 1 medium onion, chopped
  • 1 cup shredded cheddar cheese (or your favorite cheese)
  • ½ cup sour cream
  • 1 cup crushed crackers (like Ritz or saltines)
  • 2 eggs, beaten
  • ¼ cup milk
  • Salt and pepper to taste
  • 1 tablespoon butter (for greasing)

Instructions

  1. Grease the inside of your crockpot with butter.
  2. In a large bowl, combine the sliced squash, chopped onion, cheddar cheese, sour cream, crushed crackers, beaten eggs, milk, salt, and pepper. Stir until well combined.
  3. Pour the mixture into the prepared crockpot, spreading it evenly.
  4. Cover and cook on low for 4-5 hours or on high for 2-3 hours until the squash is tender and the casserole is set.
  5. Insert a fork into the center to check for doneness; it should come out clean.
  6. Serve immediately and enjoy!

Notes

Feel free to swap yellow squash for zucchini or add cooked ground turkey for extra protein. Leftovers can be stored in an airtight container in the fridge for up to 3 days.
