Ingredients

Scale
  • 4 chicken thighs or breasts (skin-on)
  • ¼ cup peri peri sauce (store-bought or homemade)
  • 2 tablespoons olive oil
  • 4 garlic cloves, minced
  • 1 teaspoon paprika
  • Juice of 1 lemon
  • Salt and pepper to taste

Instructions

  1. Prepare the Marinade: Mix peri peri sauce, olive oil, garlic, paprika, lemon juice, salt, and pepper in a bowl.
  2. Marinate the Chicken: Place chicken in a bag or dish, pour marinade over and coat well; marinate for at least 30 minutes or overnight.
  3. Preheat the Oven/Air Fryer: Set the oven or air fryer to 400°F (200°C).
  4. Cook the Chicken: Place marinated chicken in a roasting pan or air fryer; bake for 25-30 minutes or air fry for 20-25 minutes until cooked through.
  5. Let it Rest: Remove from heat and let the chicken rest for 5 minutes before slicing.
  6. Serve and Enjoy: Serve with rice, veggies, or crispy potatoes, drizzling extra peri peri sauce on top if desired.

Notes

For a milder flavor, use less peri peri sauce or a mild version. Great for meal prep and pairs well with salads or coconut rice.
