  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • ¾ cup granulated sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 3 large apples, peeled and sliced
  • ½ cup brown sugar
  • 1 tsp cinnamon
  • ¼ tsp nutmeg
  • 1 tbsp lemon juice

Instructions

  1. In a bowl, combine graham cracker crumbs and melted butter. Press mixture firmly into the bottom of a greased slow cooker.
  2. In a separate bowl, toss sliced apples with brown sugar, cinnamon, nutmeg, and lemon juice. Set aside.
  3. Beat the softened cream cheese and granulated sugar together until smooth. Add in eggs one at a time and mix in vanilla extract.
  4. Pour the cheesecake batter over the crust in the slow cooker. Top with the apple mixture, spreading evenly.
  5. Cover and cook on high for about 2-2.5 hours or until the center is set. Check for doneness with a toothpick; it should come out clean.
  6. Turn off the slow cooker and let the cheesecake cool in the cooker with the lid slightly ajar for an hour.
  7. Transfer the cheesecake to the refrigerator for at least 4 hours (or overnight) before serving.

Notes

For serving, consider adding whipped cream, vanilla ice cream, or caramel sauce. Can be customized with nuts.
