  • 3 Honeycrisp apples, cored and diced
  • ½ cup walnuts or pecans, chopped
  • ½ cup plain Greek yogurt (or your favorite yogurt)
  • 2 tablespoons honey (or maple syrup)
  • 1 tablespoon lemon juice
  • A pinch of cinnamon (optional)
  • Fresh mint leaves for garnish (optional)

Instructions

  1. Wash and core the Honeycrisp apples, then dice them into bite-sized pieces and place them in a large mixing bowl.
  2. In a separate bowl, combine the Greek yogurt, honey, lemon juice, and a pinch of cinnamon. Stir until well blended.
  3. Pour the dressing over the diced apples. Add the chopped walnuts or pecans.
