Ingredients

Scale
  • 2 ripe bananas (mashed)
  • 1/2 cup unsalted butter (softened)
  • 3/4 cup brown sugar (packed)
  • 1 egg (lightly beaten)
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • Optional: 1/2 cup chocolate chips or nuts

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together the softened butter and brown sugar until light and fluffy.
  3. Add the mashed bananas, egg, and vanilla extract to the mixture, and stir until well combined.
  4. In another bowl, whisk together the flour, baking soda, salt, and cinnamon.
  5. Gradually add the dry ingredients to the wet ingredients, stirring until just combined. If using, fold in the chocolate chips or nuts.
  6. Using a spoon or cookie scoop, drop tablespoons of dough onto a prepared baking sheet lined with parchment paper.
  7. Bake in the preheated oven for 10-12 minutes, or until the edges are golden and the cookies are set. Allow to cool before serving.

Notes

Use overripe bananas for best flavor and sweetness. Store in an airtight container for up to a week.
