Ingredients

  • 2 egg whites (room temperature)
  • â…› tsp kosher salt
  • 4 tbsp sugar
  • ¼ tsp vanilla extract
  • 1 (6 oz) box instant vanilla pudding
  • 2¾ cups milk
  • 1 (7¼ oz) box vanilla wafers
  • 4 medium bananas (sliced)

Instructions

  1. Beat the egg whites and kosher salt together until frothy.
  2. Gradually add sugar, one tablespoon at a time, until stiff peaks form, then add vanilla extract.
  3. Combine the milk and instant vanilla pudding in a separate bowl and whisk until smooth.
  4. Layer vanilla wafers at the bottom of a serving dish, followed by a layer of sliced bananas and pudding mixture.
  5. Repeat the layers until all ingredients are used, finishing with pudding.
  6. Spread the meringue evenly over the top of the pudding.
  7. Bake in a preheated oven at 350°F until lightly browned, about 10 to 12 minutes.

Notes

For a more intense flavor, use ripe bananas. Store leftovers in the refrigerator for up to 3 days.
