Ingredients

  • 1/2 cup white sugar
  • 1/4 cup brown sugar
  • 1 cup all-purpose flour
  • 3/4 cup quick oats
  • 1 egg yolk (room temperature)
  • 1/2 cup unsalted butter (melted)
  • 1/2 cup white sugar (for filling)
  • 3 tbsp lemon juice
  • 2 cups frozen blueberries (or fresh)

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper for easy removal.
  2. Combine the brown sugar, white sugar, all-purpose flour, and quick oats in a large mixing bowl. Stir until well mixed.
  3. Add the egg yolk and melted butter to the flour mixture. Mix until the dough is crumbly but holds together when pressed.
  4. Press about two-thirds of the dough mixture firmly into the bottom of the prepared baking pan. Set aside the remaining dough for topping.
  5. Combine the blueberries, 1/2 cup of white sugar, and lemon juice in another bowl. Spread this berry mixture evenly over the crust you just pressed down.
  6. Sprinkle the reserved crumble mixture over the top of the blueberries evenly.
  7. Bake in the preheated oven for 30 to 35 minutes, or until the top is golden brown.
  8. Remove from the oven and let cool in the pan before slicing into bars.

Notes

For a chewier texture, use old-fashioned oats instead of quick oats. Store leftovers in an airtight container.
