Ingredients

  • 1/2 cup white sugar
  • 1/4 cup brown sugar
  • 1 cup all-purpose flour
  • 3/4 cup quick oats
  • 1 egg yolk (room temperature)
  • 1/2 cup unsalted butter (melted)
  • 3 tbsp lemon juice
  • 2 cups frozen blueberries (or fresh)

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare an 8×8-inch baking pan lined with parchment paper.
  2. Mix the brown sugar, white sugar, all-purpose flour, and quick oats in a large mixing bowl.
  3. Add the egg yolk and melted unsalted butter to the dry mixture and mix until crumbly.
  4. Press the remaining mixture evenly into the bottom of the prepared baking pan to form the base.
  5. Combine the frozen blueberries, white sugar, and lemon juice in a separate bowl and gently stir.
  6. Spoon the blueberry mixture over the pressed base in the baking pan.
  7. Sprinkle the reserved crumble mixture over the blueberry filling.
  8. Bake for 30-35 minutes until the topping is golden brown and the filling is bubbling.
  9. Cool in the pan on a wire rack, lift out using parchment, and cut into squares.

Notes

For a nutty flavor, consider adding chopped nuts to the crumble mixture. Store leftovers in an airtight container at room temperature.
