Ingredients

  • 2 cups rolled oats
  • 1 ripe banana
  • 1/2 cup nut butter (peanut butter or almond butter)
  • 1/4 cup honey or maple syrup
  • 1/2 cup mix-ins (chocolate chips, nuts, or dried fruit)
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon (optional)
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, mash the banana until smooth, then mix in the nut butter, honey or maple syrup, and vanilla extract until well-combined.
  3. Stir in the oats, cinnamon, and salt until everything is mixed evenly.
  4. Fold in your chosen mix-ins (chocolate chips, nuts, or dried fruit).
  5. Scoop the dough onto the prepared baking sheet, forming cookies about 1.5 inches apart.
  6. Bake for 12–15 minutes or until the edges are golden. They will firm up as they cool.
  7. Let them cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

Store in an airtight container for up to a week at room temperature or refrigerate for longer shelf life. Can be frozen for up to 3 months.
