  • 2 tablespoons cake flour
  • 1 cup powdered sugar
  • 1/2 teaspoon cinnamon
  • 3 tablespoons unsalted butter (melted and cooled)
  • 2 1/2 tablespoons milk

Instructions

  1. In a stand mixer bowl, combine unsalted butter, granulated sugar, and brown sugar. Beat on medium-high speed for 2-3 minutes until creamy.
  2. Add eggs and vanilla extract, and beat for another 1-2 minutes until light and fluffy.
  3. In a separate bowl, whisk together cake flour, cornstarch, baking soda, baking powder, and salt.
  4. Gradually add dry ingredients to the wet mixture, mixing on medium speed for 1-2 minutes.
  5. Cover the dough and chill in the refrigerator for 1 hour.
  6. Preheat oven to 350°F (175°C) and prepare baking sheets.
  7. Stir together softened butter, light brown sugar, cinnamon, and cake flour for the filling.
  8. Roll filling into balls and place on baking sheet.
  9. Scoop dough, create a well, place filling ball, cover with dough, seal, and shape into a ball.
  10. Arrange cookies on baking sheets and bake for 11-13 minutes until edges are golden.
  11. Cool for 5 minutes, then transfer to wire rack.
  12. For icing, whisk powdered sugar, cinnamon, melted butter, and milk until smooth and spread on cookies.
  13. Let icing set for 15 minutes before enjoying.
