Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, beat the softened butter and brown sugar together until pale and fluffy, about 2-3 minutes.
  3. Mix in the egg and vanilla extract until fully combined.
  4. In another bowl, whisk together the flour, baking soda, cinnamon, and salt.
  5. Gradually add the dry ingredients to the wet mixture while mixing on low speed until just combined.
  6. Using a cookie scoop, drop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  7. Bake for 10-12 minutes or until the edges are slightly golden.
  8. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack.

Notes

For best results, do not overbake. Store in an airtight container for up to 1 week.
