Ingredients

  • 1 pound Roma tomatoes
  • 2 cloves garlic
  • ½ cup torn fresh basil
  • 1 tablespoon balsamic vinegar
  • Kosher salt
  • Freshly ground black pepper
  • ½ pound angel hair pasta
  • 11½ pounds boneless, skinless chicken breasts
  • Balsamic glaze, optional
  • 1 tablespoon olive oil

Instructions

  1. Combine the Roma tomatoes, minced garlic, torn basil, and balsamic vinegar in a medium bowl. Season with Kosher salt and black pepper. Let sit.
  2. Cook the angel hair pasta according to package instructions until al dente. Toss with olive oil.
  3. Heat another tablespoon of olive oil in a skillet. Season chicken with salt and pepper, and cook until internal temperature reaches 165°F (74°C).
  4. Add the bruschetta mixture to the skillet and heat through for 1-2 minutes. Combine with cooked pasta.
  5. Slice the rested chicken and mix with pasta. Serve with fresh basil and optionally drizzle with balsamic glaze.

Notes

For enhanced flavor, marinate chicken in olive oil, garlic, and basil for 30 minutes before cooking. Store leftovers in the refrigerator for up to 3 days.
