Ingredients

  • 2 cups rotini or penne pasta
  • 2 chicken breasts (about 1 pound), diced
  • 8 oz cream cheese
  • 1 cup shredded cheddar cheese
  • 1 bell pepper, diced (red or green)
  • 1 medium onion, diced
  • 2 cups chicken broth
  • 2 tablespoons Cajun seasoning
  • Salt and pepper to taste
  • Cooking oil (olive or vegetable)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Boil a large pot of salted water and add the pasta, cooking for 8-10 minutes until al dente. Drain and set aside.
  3. In a large skillet, heat 2 tablespoons of oil over medium heat. Add diced onions and bell pepper, cooking for 3-4 minutes until translucent. Add chicken, seasoning with salt, pepper, and 1 tablespoon Cajun seasoning, cooking until chicken is no longer pink, about 5-7 minutes.
  4. Lower heat, add cream cheese, stirring until melted. Gradually mix in chicken broth and let simmer for 3-4 minutes until the sauce is smooth. Add more Cajun seasoning if desired.
  5. Fold in cooked pasta until coated in creamy sauce. Transfer to a greased casserole dish, spread evenly, and top with shredded cheddar.
  6. Bake for 20-25 minutes until cheese is golden and bubbly.

Notes

This dish can be prepared in advance and refrigerated before baking. For a healthier twist, consider using Greek yogurt instead of cream cheese.
