  • 2 large yellow onions, sliced thinly

  • 12 tablespoons bourbon (optional)

Instructions

  1. Prep your onions: Slice the onions thinly, aiming for even slices about 1/4 inch thick.
  2. Heat the pan: In a large skillet, heat the butter and olive oil over medium heat.
  3. Add the onions: Once the butter is foamy, add the sliced onions and a pinch of salt, stirring to coat.
  4. Caramelize slowly: Reduce heat to medium-low and cook the onions, stirring every 5-7 minutes for about 30-40 minutes.
  5. Sweeten the deal: After 30 minutes, sprinkle brown sugar over the onions and stir; add bourbon if using.
  6. Finish and season: Continue cooking for another 10-15 minutes until onions are rich and golden brown. Adjust salt to taste.

Notes

For a lighter version for kids, you can omit the brown sugar and bourbon.
