Ingredients

  • 4 boneless, skinless chicken thighs
  • 2 tablespoons olive oil
  • 3 garlic cloves, minced
  • Juice of 1 lemon
  • 1 teaspoon ground cumin
  • 1 teaspoon ground paprika
  • 1 teaspoon ground coriander
  • Salt and pepper to taste
  • 1/2 cup plain yogurt or tahini
  • Pita bread or flatbreads for serving

Instructions

  1. In a mixing bowl, whisk together olive oil, minced garlic, lemon juice, cumin, paprika, coriander, salt, and pepper. Add chicken and marinate for at least 30 minutes.
  2. Preheat air fryer to 380°F (193°C) or heat a skillet over medium-high heat.
  3. Cook chicken in air fryer for 18-20 minutes or in skillet for 6-7 minutes per side until internal temperature reaches 165°F (74°C).
  4. While chicken is cooking, blend garlic, lemon juice, yogurt or tahini, and a pinch of salt until smooth to make garlic sauce.
  5. Let chicken rest, then slice against the grain.
  6. Warm pita bread in the oven or skillet.
  7. Assemble by layering sliced chicken in warm pita, drizzling with garlic sauce, and adding desired toppings.

Notes

For best flavor, marinate chicken overnight. Adjust garlic quantity based on preference for the sauce.
