Ingredients

  • 1 cup granulated sugar
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup unsalted butter
  • 1/2 cup milk
  • 1 cup creamy peanut butter
  • 3 cups quick oats
  • 1 teaspoon vanilla extract

Instructions

  1. Line a cookie sheet with parchment paper and set aside.
  2. In a medium saucepan, combine sugar, cocoa powder, butter, and milk.
  3. Bring to a gentle boil over medium heat, stirring constantly. Let it boil for 1 minute before removing from heat.
  4. Stir in the peanut butter until it’s completely melted and smooth.
  5. Remove the saucepan from heat and stir in the quick oats and vanilla extract until well-combined.
  6. Using a spoon or cookie scoop, drop spoonfuls of the mixture onto the prepared parchment paper.
  7. Allow the cookies to cool and set at room temperature for about 30 minutes, or until firm.

Notes

Use natural peanut butter for a creamier texture. These cookies can also be frozen for up to 3 months.
