Ingredients

Scale
  • 1 cup (200g) granulated sugar
  • ½ cup (115g) unsalted butter, softened
  • 1 large egg
  • 1 tsp vanilla extract
  • 2 cups (240g) all-purpose flour
  • ½ cup (50g) unsweetened cocoa powder
  • ½ tsp baking soda
  • ¼ tsp salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, cream together the softened butter and sugar for about 2–3 minutes until light and fluffy.
  3. Add in the egg and vanilla extract, and mix until thoroughly combined.
  4. In a separate bowl, whisk together the flour, cocoa powder, baking soda, and salt.
  5. Gradually add the dry mixture to the wet mixture, mixing until just incorporated.
  6. Scoop the dough by the tablespoon onto a baking sheet lined with parchment paper, spaced about 2 inches apart.
  7. Bake in the preheated oven for 10–12 minutes, or until the edges are set and slightly cracked on the top.
  8. Let them cool on the baking sheet for 5 minutes before transferring them to a wire rack.

Notes

Store cookies in an airtight container for up to a week. Feel free to add chocolate chips or nuts for extra flavor.
