Ingredients

  • 2 cups mixed dried fruit (raisins, cranberries, apricots)
  • 1 cup mixed nuts (chopped walnuts or pecans)
  • 1 cup orange juice
  • 1 cup brown sugar
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 2 teaspoons cinnamon
  • 1 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 1/2 cup vegetable oil

Instructions

  1. Grease the inside of your slow cooker with butter or cooking spray.
  2. In a bowl, combine flour, baking powder, cinnamon, nutmeg, and salt.
  3. In another bowl, whisk together the brown sugar, orange juice, and vegetable oil until smooth.
  4. Gradually add the dry mixture to the wet mixture, stirring in the dried fruits and nuts until just combined.
  5. Pour the batter into the prepared slow cooker and spread it evenly.
  6. Cover and cook on high for 3 to 4 hours or on low for 6 to 7 hours until a toothpick inserted comes out clean.
  7. Let the cake cool in the slow cooker for 30 minutes before transferring to a wire rack. Enjoy it warm or store it for later!
