Ingredients

  • 2 cups cream cheese (softened)
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 2 teaspoons all-purpose flour
  • ½ teaspoon baking powder
  • 1 cup sugar cookie dough (store-bought or homemade)
  • Optional: Sprinkles for topping

Instructions

  1. Grease the inside of your slow cooker with non-stick spray or line it with parchment paper for easier removal.
  2. In a mixing bowl, beat the softened cream cheese until smooth. Add the sugar and vanilla extract, mixing well.
  3. Beat in the eggs one at a time, ensuring each is well incorporated before adding the next.
  4. In a separate bowl, whisk together the flour and baking powder. Gradually mix these dry ingredients into the cheesecake batter.
  5. Spread half of the sugar cookie dough across the bottom of the slow cooker. Pour the cheesecake batter over it, then crumble the remaining sugar cookie dough on top.
  6. Cover the slow cooker and set it to low heat. Cook for about 120 to 180 minutes or until the cheesecake is set and a toothpick inserted comes out clean.
  7. Allow the cheesecake to cool at room temperature before transferring it to the fridge to chill for at least 120 minutes.

Notes

For best results, use room temperature ingredients and don’t lift the lid while cooking. You can add variations like crushed peppermint or chocolate chips for a festive twist.
