½ teaspoon salt
½ teaspoon ground cinnamon
½ cup unsalted butter, softened
¾ cup brown sugar
¼ cup granulated sugar
1 large egg
1 teaspoon vanilla extract
1 cup dried cranberries
½ cup chopped walnuts
Instructions
Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a bowl, combine rolled oats, flour, baking soda, salt, and cinnamon. Set aside.
In a separate bowl, beat together the softened butter, brown sugar, and granulated sugar until creamy and light.
Mix in the egg and vanilla extract, stirring until well combined.
Gradually add the dry ingredient mixture into the wet mixture. Stir until just combined, then fold in the dried cranberries and walnuts.
Drop tablespoon-sized mounds of dough onto the prepared baking sheet, spacing them about 2 inches apart.
