Ingredients

  • 4 large Flour Tortillas
  • 1 pound Beef Steak (Sirloin or flank steak)
  • 1 pound Shrimp (peeled and deveined)
  • 1 cup Bell Peppers, sliced
  • 1 medium Onion, sliced
  • 1 ½ cups Cheddar Cheese, shredded
  • 2 tablespoons Creole Seasoning
  • 2 tablespoons Olive Oil
  • Salt and Pepper to taste

Instructions

  1. Prepare the Ingredients: Slice steak against the grain into strips and mix with shrimp, bell peppers, and onions. Toss with Creole seasoning, salt, and pepper.
  2. Sauté the Mixture: In a large skillet, heat olive oil over medium-high heat. Add the steak and shrimp mixture and sauté for 5-7 minutes until shrimp are pink and steak is cooked.
  3. Assemble the Quesadillas: Lay out a tortilla, sprinkle half with cheese, add a portion of the meat mixture, top with more cheese, and fold over.
  4. Cook the Quesadillas: In the skillet, add olive oil if needed, place the folded quesadilla in the pan, and cook for 3-4 minutes on each side until golden brown.
  5. Slice & Serve: Remove from the pan, let rest, cut into wedges, and serve warm.
  6. Repeat: Continue assembling and cooking the remaining quesadillas, keeping cooked ones warm.
  7. Enjoy: Serve with sour cream, salsa, or guacamole.

Notes

For a heartier dish, feel free to add or substitute with other vegetables or proteins.
