Instructions

  1. In a large mixing bowl, combine the ground beef, breadcrumbs, Parmesan cheese, milk, eggs, Worcestershire sauce, salt, and pepper. Blend thoroughly until the mixture is uniform.
  2. Shape the beef mixture into a compact loaf and place it gently at the bottom of the crockpot.
  3. In a medium skillet over medium heat, melt the butter. Add the sliced onions and sauté, stirring occasionally, for about 20 minutes or until the onions are deeply golden and softened.
  4. Pour the beef broth into the skillet with the caramelized onions, stirring to combine. Allow this mixture to absorb and enrich for about 2 minutes.
  5. Carefully spoon the caramelized onion and broth mixture over the prepared beefloaf in the crockpot, ensuring even coverage.
  6. Cover the crockpot and cook on low heat for 360 to 480 minutes, or until the meatloaf is fully cooked and the juices run clear.
  7. About 10 minutes before serving, place the Swiss cheese slices on top of the hot beefloaf. Cover and allow the cheese to melt completely.
  8. Slice the beefloaf and serve warm, ensuring each portion is topped with the melted cheese and caramelized onions.

Notes
