  • 2 large eggs
  • 1 tsp vanilla extract
  • ½ tsp coconut extract (optional)
  • ½ cup cream cheese (for frosting)
  • 1 ½ cups powdered sugar (for frosting)

Instructions

  1. Grease the slow cooker insert with non-stick spray or butter.
  2. In a large bowl, whisk together flour, sugar, shredded coconut, baking powder, baking soda, and salt.
  3. In another bowl, mix coconut milk, vegetable oil, eggs, vanilla extract, and coconut extract until well combined.
  4. Gradually add the wet ingredients to the dry ingredients, stirring until just combined.
  5. Pour the batter into the prepared slow cooker. Cover with a kitchen towel before placing the lid on.
  6. Cook on low for 3–4 hours or until a toothpick inserted in the center comes out clean.
  7. Allow the cake to cool. In a medium bowl, beat cream cheese and powdered sugar until smooth. Spread over cooled cake.

Notes

Make sure to use a kitchen towel under the slow cooker lid to catch condensation. For a more intense coconut flavor, don’t skip the coconut extract. This cake also works well as cupcakes—just adjust the cook time!
