Ingredients

Scale
  • 2 lbs boneless, skinless chicken thighs (or breasts)
  • 4 cups low-sodium chicken broth
  • 1 cup carrots, chopped
  • 1 cup celery, chopped
  • 1 cup frozen peas
  • 1 onion, diced
  • 1 tsp garlic powder
  • Salt and pepper, to taste
  • 2 cups refrigerated biscuit dough

Instructions

  1. Chop the carrots, celery, and onion.
  2. Place the chicken, chopped vegetables, garlic powder, salt, and pepper into the slow cooker.
  3. Pour the chicken broth over the chicken and veggies.
  4. Set the slow cooker to low and cook for 6-8 hours or high for 3-4 hours, until the chicken is cooked through and tender.
  5. About 30 minutes before serving, cut biscuit dough into quarters and drop them into the slow cooker.
  6. Cover and cook for the final 30 minutes until the dumplings are cooked through.
  7. Shred the chicken if desired, stir gently, and enjoy your comforting bowl of chicken and dumplings!

Notes

Use leftover rotisserie chicken for quicker prep. Store leftovers in an airtight container for up to 3 days.
