Ingredients

  • 1 cup orzo pasta, cooked and drained
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1 bell pepper, chopped
  • ¼ cup red onion, finely diced
  • ¼ cup feta cheese, crumbled (optional)
  • ¼ cup fresh parsley, chopped
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper, to taste

Instructions

  1. In a large pot, bring salted water to a boil. Add orzo and cook according to package instructions (approximately 8-10 minutes) until al dente. Drain and rinse with cold water to stop cooking.
  2. While the orzo cooks, chop the cherry tomatoes, cucumber, bell pepper, and red onion.
  3. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper until emulsified.
  4. In a large mixing bowl, combine the cooked orzo, chopped vegetables, parsley, and crumbled feta cheese.
  5. Pour the dressing over the orzo salad and toss gently until everything is well coated.
  6. Allow the salad to sit for at least 15 minutes to let the flavors meld. Serve chilled or at room temperature.
  7. Dig in and savor every bite!
