Ingredients

  • 2 cups orzo pasta
  • 2 cups cooked chicken, shredded
  • 2 large onions, thinly sliced
  • 3 cups chicken broth
  • 2 cups shredded Gruyère or Swiss cheese
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. In a skillet over medium heat, pour in the olive oil. Add the sliced onions and sprinkle with a pinch of salt. Stir occasionally for about 15-20 minutes until they become golden brown and fragrant.
  2. In a large pot, bring the chicken broth to a boil. Add the orzo and cook for about 8-10 minutes until al dente. Drain and set aside.
  3. In a large mixing bowl, combine the caramelized onions, cooked orzo, and shredded chicken. Mix well before adding dried thyme, salt, and pepper.
  4. Preheat your oven to 350°F (175°C). Transfer the mixture to a greased baking dish. Spread it evenly and top with cheese.
  5. Bake for about 25-30 minutes until the cheese is bubbly and golden brown.
  6. Allow the casserole to cool for a few minutes before serving.

Notes

For a lighter version, swap chicken for mushrooms. You can use any small pasta if orzo is unavailable.
