Ingredients

  • 11.5 lbs sirloin or flank steak, cut into bite-sized pieces
  • 1 lb baby potatoes, halved
  • 45 cloves garlic, minced
  • 3 tablespoons olive oil
  • Salt and pepper to taste
  • 1 tablespoon chopped fresh rosemary or thyme

Instructions

  1. Prep the Steak and Potatoes: Cut the steak into bite-sized pieces and halve the baby potatoes. Set aside.
  2. Marinate the Steak: Mix half of the minced garlic with 2 tablespoons of olive oil, salt, and pepper. Marinate the steak for at least 15 minutes.
  3. Roast the Potatoes: Preheat the oven to 400°F (200°C). Toss halved potatoes with remaining olive oil, garlic, salt, and rosemary. Roast for 25-30 minutes until golden and tender, turning once.
  4. Cook the Steak Bites: Heat a skillet over medium-high heat and sear marinated steak bites for about 3-4 minutes on each side until cooked through.
  5. Combine and Finish: Add cooked steak to the baking sheet with potatoes and bake for an additional 5 minutes to meld flavors.
  6. Garnish and Serve: Garnish with fresh herbs and serve hot.
