These gluten-free hot chocolate cookies have a soft chocolate centre and lightly toasted Swiss meringue. Follow the ingredient weights and visual cues below, then use the recipe card for the full method.
Three chocolate-cookie components
Gluten-free hot chocolate cookies combine a cocoa-rich cookie base, a soft chocolate filling and a toasted Swiss meringue topping. The filling bakes inside an open well in the cookie, while the meringue is prepared and added afterward.
This is not a marshmallow-stuffed cookie. Swiss meringue begins with egg whites and sugar heated together before whipping. Its light texture provides a contrast to the buttery cookie and dense chocolate centre.
Make the filling before shaping
Melt the chocolate, cream and butter gently, then cool the mixture until warm before stirring in sugar, egg, vanilla and salt. Stir rather than whip; you are aiming for a smooth filling, not an aerated chocolate mousse.
If it becomes too thick while you prepare the dough, place the bowl in warm water and stir until spoonable. Keep the water out of the chocolate. Avoid microwaving this egg-containing filling because uneven heat can scramble the egg.
Build a dough that supports the centre
Cream softened butter and brown sugar before adding yolks and vanilla. Mix the flour, Dutch-process cocoa, baking powder, xanthan gum and salt separately, then combine with the wet mixture. The dough should hold a scooped shape.
A plain gluten-free blend works differently from coconut or almond flour. Weigh the stated amount and omit extra xanthan gum if the blend already contains it. Different blends may change absorption, so note the brand you use for future batches.
Shape and bake for a soft filling
Roll two-tablespoon portions into balls, coat in granulated sugar and press a central well with a tablespoon measure. Divide the chocolate filling among those wells, keeping the dough intact underneath.
The detailed bake is eight to nine minutes at 350°F / 180°C. Look for a slight puff and a little wobble in the centre when the tray is moved. The card uses a rounded ten-minute cook estimate; visual cues and the detailed range guide the bake.
Prepare Swiss meringue with a thermometer
Whisk egg whites, sugar and cream of tartar over simmering water until the mixture reaches 160°F / 70°C and the sugar dissolves. Remove from the heat, then whip until the volume increases and stiff peaks form.
Add vanilla, pipe onto baked cookies and lightly toast the ridges with a kitchen torch. Use a heatproof setup and keep the flame controlled. A browned surface is enough; the goal is not a dark burnt coating.
Timing the topping for serving
The cookies are fragile just after baking, so let them settle on their trays before handling. Pipe the meringue close to serving for its best texture. Warm cookies have a softer chocolate centre, while refrigeration makes the filling firmer.
A small spoon or fork shows the layers without needing an exaggerated filling pull. For a different cream-filled bake, see our pumpkin roll with vanilla cream cheese.
Store according to the topping
Undecorated cookies keep airtight for about two days at room temperature or four to five days refrigerated. Once topped with Swiss meringue, refrigerate and use within two days.
Check the chocolate and cocoa labels as well as the flour and raising agent. These cookies contain eggs and milk. Use clean bowls and tools to limit gluten cross-contact throughout the preparation.

Gluten-Free Hot Chocolate Cookies
Ingredients
Method
- Heat a conventional oven to 350°F / 180°C and line two baking trays.
- Melt the filling chocolate, cream and butter over low heat. Transfer to a bowl and let cool until warm. Stir in sugar, egg, vanilla and salt without whipping.
- Cream the dough butter and brown sugar until pale. Mix in yolks and vanilla. Combine flour, cocoa, baking powder, xanthan gum and salt, then mix into the wet ingredients to make a scoopable dough.
- Shape 2-tbsp portions into balls and roll in granulated sugar. Space at least 2 inches / 5 cm apart. Press a well with a 1-tbsp measuring spoon.
- Add about 1 tbsp chocolate filling per cookie. If it has become too thick, loosen the filling by setting its bowl in warm water; keep water out. Do not microwave the egg-containing filling.
- Bake one tray at a time for 8–9 minutes, until slightly puffed with a little wobble remaining in the chocolate centre. Keep the waiting tray at room temperature. Let baked cookies cool on their trays until safe to handle.
- For the meringue, whisk whites, sugar and cream of tartar in a heatproof bowl over simmering water until 160°F / 70°C and the sugar has dissolved.
- Remove from the heat. Whip at high speed for 5–7 minutes to stiff peaks, then mix in vanilla.
- Pipe onto warm or room-temperature cookies and lightly toast with a kitchen torch. Decorate close to serving for the best texture.
Notes
With meringue: refrigerate for up to 2 days. GLUTEN-FREE NOTE
