Ingredients

  • 1 ½ cups all-purpose flour
  • ½ cup unsalted butter, softened
  • ½ cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • ½ tsp baking powder
  • ½ tsp salt
  • 1 large apple, peeled and diced
  • ¼ cup brown sugar
  • 1 tsp ground cinnamon
  • ¼ tsp nutmeg
  • 1 tbsp lemon juice
  • Optional: ¼ cup nuts or raisins

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, cream together the butter and granulated sugar until light and fluffy. Add in the egg and vanilla, mixing well.
  3. In another bowl, whisk together the flour, baking powder, and salt. Gradually add this to the butter mixture, mixing until just combined.
  4. In a separate bowl, toss together the diced apple, brown sugar, cinnamon, nutmeg, lemon juice, and optional nuts or raisins.
  5. Scoop out tablespoon-sized amounts of dough, flatten them, and place a heaping teaspoon of the apple filling in the center. Fold the dough over and press edges to seal.
  6. Place the filled cookies on the prepared baking sheet, and bake for 12-15 minutes or until golden brown around the edges.
  7. Let the cookies cool on the baking sheet for about 5 minutes before transferring them to a wire rack.

Notes

Store cookies in an airtight container at room temperature for up to 3 days. Freeze dough for up to 2 months.
