  • 2 medium zucchinis – sliced into rounds
  • 1 lb chicken breast – boneless and skinless, cut into bite-sized pieces
  • 1 cup cherry tomatoes – halved
  • 1 onion – diced
  • 3 cloves garlic – minced
  • 1 tsp dried oregano – for Mediterranean flavor
  • 1 tsp dried thyme – adds depth
  • 1 tsp paprika – for a touch of sweetness
  • Salt and pepper – to taste
  • 2 tbsp olive oil – for cooking
  • 1 cup feta cheese – crumbled (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, combine the sliced zucchinis, halved cherry tomatoes, diced onion, and minced garlic.
  3. In a separate bowl, mix the chicken pieces with olive oil, oregano, thyme, paprika, salt, and pepper until evenly coated.
  4. Add the seasoned chicken to the vegetables and mix well until everything is evenly distributed.
  5. Spread the mixture in a baking dish and bake for about 30-35 minutes, or until the chicken is cooked through and the zucchinis are tender.
  6. If using, sprinkle crumbled feta cheese on top during the last 5 minutes of baking.
  7. Once cooked, remove from the oven, garnish with fresh basil, and serve.
