Ingredients

  • 1 cup peanut butter
  • 1/2 cup honey or maple syrup
  • 3 cups rolled oats
  • 1 cup chocolate chips
  • 2 cups mini marshmallows

Instructions

  1. Prepare your workspace by lining a baking sheet with parchment paper.
  2. Melt the peanut butter and honey together in a large mixing bowl by microwaving them for 30-45 seconds until soft.
  3. Mix in the oats and chocolate chips until evenly coated.
  4. Gently fold in the mini marshmallows without crushing them.
  5. Scoop small mounds of the mixture onto the prepared baking sheet, leaving space between each.
  6. Chill the cookies in the refrigerator for at least 1-2 hours until set.
  7. Once chilled, remove from the fridge and let sit for a few minutes before serving.

Notes
