Ingredients

  • 1 cup rolled oats
  • 1/2 cup peanut butter (or almond/sunflower butter for nut-free)
  • 1/2 cup honey or maple syrup
  • 1/4 cup caramel sauce
  • 1/4 tsp sea salt
  • 1/4 cup chocolate chips (optional)

Instructions

  1. In a large mixing bowl, combine rolled oats, peanut butter, honey or maple syrup, and caramel sauce.
  2. Stir in the sea salt until well blended.
  3. If using, fold in the chocolate chips.
  4. Form small balls (about 1 inch in diameter) and place them on a parchment-lined baking sheet.
  5. Press each cookie down slightly to flatten.
  6. Refrigerate for at least 30 minutes or until firm.
  7. Enjoy your cookies straight from the fridge or let them sit for a few minutes for a softer texture!
