Ingredients

  • 1 ½ cups all-purpose flour
  • ½ tsp baking soda
  • ½ tsp salt
  • ½ cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 cup chopped pecans
  • Optional: Chocolate chips or dried cranberries

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together the flour, baking soda, and salt. Set aside.
  3. In another bowl, cream the softened butter and brown sugar until light and fluffy (about 2-3 minutes).
  4. Add the egg and vanilla extract into the butter mixture, blending well.
  5. Gradually add the dry ingredients to the butter mixture, mixing until just combined. Fold in the chopped pecans (and chocolate chips or cranberries, if using).
  6. Drop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  7. Bake for 10-12 minutes or until golden brown around the edges. Let cookies cool on the sheet for 5 minutes before transferring them to a wire rack.

Notes

Store cookies in an airtight container at room temperature for up to 5 days. Freeze raw dough balls for up to 3 months.
