Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar for 2-3 minutes.
  3. Mix in the egg and vanilla extract until well combined.
  4. Gradually add the flour, oats, baking soda, and salt, and stir until just combined.
  5. Fold in the chopped pecans.
  6. Scoop generous tablespoons of dough onto the lined baking sheet, spacing them about 2 inches apart.
  7. Bake in the preheated oven for 12-15 minutes or until golden brown around the edges. Let cool for 5 minutes before transferring to a wire rack.
