  • 2 cups all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1/2 cup powdered sugar
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/2 cup pineapple jam

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, cream together the softened butter, powdered sugar, and granulated sugar until light and fluffy.
  3. Beat in the egg and vanilla extract until well combined.
  4. Gently mix in the flour, baking powder, and a pinch of salt until just combined. Don’t overmix!
  5. Roll out the dough to about 1/4 inch thick, and use a pineapple-shaped cookie cutter or mold to cut out shapes. Place half on a baking sheet lined with parchment paper.
  6. Spoon about 1 teaspoon of pineapple jam in the center of each cookie shape. Place another cut-out on top, pressing gently to seal.
  7. Bake for 12-15 minutes or until the edges turn golden brown. Let cool before serving.

Notes

Feel free to substitute the pineapple jam with other fruit preserves. Try adding a pinch of cinnamon or nutmeg for added flavor.
