Ingredients

  • 1 cup pumpkin puree
  • 1/2 cup unsalted butter, softened
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 8 oz cream cheese, softened
  • 1/4 cup powdered sugar
  • 1/2 teaspoon vanilla extract (for filling)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until fluffy.
  3. Beat in the pumpkin puree, egg, and vanilla extract until combined.
  4. In a separate bowl, whisk together the flour, baking soda, cinnamon, nutmeg, and salt. Gradually fold this mixture into the pumpkin mixture.
  5. In another bowl, beat the cream cheese with powdered sugar and vanilla extract until smooth.
  6. Drop about a tablespoon of cookie dough onto the baking sheet, make an indentation, fill with cream cheese mixture, and top with more dough.
  7. Bake for 12-15 minutes or until lightly golden. Cool before transferring to wire rack.

Notes

These cookies can be enjoyed warm or cold and pair well with coffee or spiced cider.
