Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup pumpkin puree
  • 1/3 cup vegetable oil
  • 2 large eggs
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/2 tsp vanilla extract
  • Cream cheese frosting (optional)

Instructions

  1. Preheat the oven to 350°F (175°C), and line a muffin tin with cupcake liners.
  2. In a mixing bowl, combine all the dry ingredients: flour, sugar, baking powder, baking soda, salt, cinnamon, and nutmeg. Whisk well.
  3. In a separate bowl, mix the wet ingredients: pumpkin puree, vegetable oil, eggs, and vanilla extract until smooth.
  4. Gradually fold the wet mixture into the dry ingredients until just combined. Avoid overmixing!
  5. Scoop the batter into the lined muffin tin, filling each about 2/3 full.
  6. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
  7. Allow to cool in the pan for 5 minutes, then transfer to a wire rack to cool completely before frosting.

Notes

Consider using apple sauce instead of oil for a healthier option.
