  • 1 cup cottage cheese
  • 1 cup pumpkin puree
  • 1/2 cup honey or maple syrup
  • 2 large eggs
  • 2 cups whole wheat flour
  • 2 teaspoons pumpkin spice
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 cup melted coconut oil

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it lightly.
  2. Mix wet ingredients in a large bowl: Combine cottage cheese, pumpkin puree, honey (or maple syrup), eggs, and melted coconut oil. Stir until smooth.
  3. Combine dry ingredients in a separate bowl: Whisk together whole wheat flour, pumpkin spice, baking soda, and salt.
  4. Gradually fold in dry ingredients: Add the flour mixture to the wet mixture, stirring gently until just combined. Don’t overmix!
  5. Pour the batter into the prepared muffin tin, filling each cup about 2/3 full.
  6. Bake for about 18–20 minutes or until a toothpick inserted in the center comes out clean.
  7. Cool in the tin for 5 minutes before transferring to a wire rack to cool completely.

Notes

Store muffins in an airtight container for up to a week and can be frozen for up to 3 months. Adjust spices to your liking.
