  • 1 box of yellow cake mix
  • 1 can (15 oz) of pumpkin puree
  • 1 cup of brown sugar
  • 1/2 cup of granulated sugar
  • 1/2 cup of butter (melted)
  • 1 teaspoon of vanilla extract
  • 2 teaspoons of pumpkin spice
  • 3 large eggs
  • 1/2 cup of heavy cream

Instructions

  1. Grease the slow cooker’s insert with cooking spray or butter.
  2. In a large bowl, combine the cake mix, brown sugar, granulated sugar, melted butter, vanilla extract, pumpkin puree, pumpkin spice, and eggs. Beat until well blended.
  3. Pour the mixture into the greased slow cooker, spreading it evenly.
  4. Gently pour the heavy cream over the top of the batter. Do not stir.
  5. Cover and cook on low for about 240 minutes or until the center is set but still slightly gooey.
  6. Once cooked, turn off the slow cooker and let the cake cool for 15-20 minutes before serving.
  7. Scoop out generous portions and enjoy warm, topped with whipped cream or ice cream.

Notes

Use fresh pumpkin puree for an authentic flavor. Adjust spice levels to your preference. Store leftovers in an airtight container in the fridge for up to 3 days.
