  • 4 large sweet potatoes – peeled and diced
  • 1/2 cup brown sugar
  • 1/4 cup unsalted butter
  • 1/2 teaspoon vanilla extract
  • 1/4 cup heavy cream
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1 cup pecans – chopped
  • 1/2 cup mini marshmallows (optional)

Instructions

  1. Prepare the sweet potatoes: Place the diced sweet potatoes in a pot of boiling water and cook until tender, about 15-20 minutes.
  2. Mash the sweet potatoes: Drain and return to the pot. Add brown sugar, butter, vanilla extract, heavy cream, cinnamon, and nutmeg. Mash until smooth and creamy.
  3. Transfer to slow cooker: Pour the sweet potato mixture into a slow cooker and spread evenly.
  4. Prepare the topping: In a separate bowl, mix chopped pecans, melted butter, and marshmallows (if using) until well combined.
  5. Top the casserole: Spread the pecan mixture over the sweet potato layer in the slow cooker.
  6. Cook: Cover and cook on low for 240 minutes or high for 120 minutes, until heated through and the pecans are toasted.
