Ingredients

  • 3/4 cup salted butter (softened, 1 and 1/2 sticks)
  • 4 ounces cream cheese (softened)
  • 1 and 1/2 cups granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 and 3/4 teaspoons almond extract
  • 1 teaspoon salt
  • 3 cups all-purpose flour (spooned and leveled)

Instructions

  1. In a large bowl or stand mixer, beat the softened butter on medium speed until soft and fluffy, about 1 to 2 minutes.
  2. Add the softened cream cheese and continue to beat for 1 minute until well incorporated.
  3. Add the granulated sugar and beat for another 1 to 2 minutes until fluffy and light.
  4. Mix in the egg, vanilla extract, and almond extract. Beat until well combined, scraping the sides and bottom of the bowl as needed.
  5. Add the salt and flour, then beat until just barely combined. Be careful not to over-mix.
  6. Scrape the dough onto a sheet of plastic wrap, cover, and chill in the fridge for 2 hours (or overnight) or in the freezer for 1 to 2 hours.
  7. When chilled, preheat the oven to 350°F (175°C).
  8. Line baking sheets with Silpat mats or parchment paper and dust a work surface with flour.
  9. Flatten the dough slightly, roll it out to about 3/8 inch thick, and use cookie cutters to cut shapes. Transfer to baking sheets.

Notes

Chill the dough before rolling it out for best results. Thicker cookies can be made by rolling the dough to 1/2 inch thick.
