Ingredients

  • 2 cups sushi rice
  • 2 1/2 cups water
  • 1 lb salmon fillets
  • 1/2 cup mayonnaise
  • 23 tbsp sriracha
  • 2 tbsp soy sauce
  • 2 green onions, chopped
  • Nori sheets (optional)

Instructions

  1. Rinse the sushi rice under cold water until the water runs clear, then combine with 2 1/2 cups of water and bring to a boil. Lower heat to a simmer and cook for 18-20 minutes.
  2. Preheat your oven to 375°F (190°C). Season the salmon fillets with salt and bake for 15-20 minutes until flaky.
  3. In a mixing bowl, combine mayonnaise, sriracha, and soy sauce to create the spicy sauce.
  4. Spread cooked sushi rice in a greased 9×13 inch baking dish, flake baked salmon on top, then generously spread the spicy mayonnaise sauce.
  5. Bake in the oven for 15-20 minutes until bubbly and golden.
  6. Garnish with chopped green onions and serve with nori sheets on the side.

Feel free to customize the toppings based on your preference, such as diced avocado or cucumbers.
